Chicken Kabobs

What is your favorite grilled food? Mine are kabobs, whether made with chicken, beef, seafood or lamb, I like putting together ingredients for kabobs.
My BFF from New Rochelle was visiting this weekend, so in addition to some “girl talk” and a few cold Peach Bellinis, we dined on crabs, shrimp and chicken kabobs.
Ingredients:
Chicken breasts, mushrooms, Mango, grape tomatoes, red onion, sweet peppers, Adobe Seasoning, pepper, Lawry Hawaiian Marinade
Soak wood skewers in cool water
Thoroughly wash mushrooms, rinse tomatoes and peppers
Dice red onion, if cut under stove’s exhaust fan there are no tears
Cut mango, mushrooms, sweet peppers and chicken into bite size pieces
Skewer alternating veggies, mango and chicken. I usually start and end with a grape tomato, they seem to hold everything in place.
Pour on marinade, cover with foil and refrigerate for at least 30 minutes
Fire up the grill and place on non-stick foil, depending on your grill’s temp, cook thoroughly until chicken is done.
Remove from grill and let sit for a few minutes before serving.

Yummy!!! Glad I’ve actually eaten before reading this time =) Hubby brought home crab leds just yesterday too, it must be summer!

Yes, it was good, I used to use beef but we don’t eat a lot of red meat anymore.

Peach Bellini for me please! Love souvlaki ( that’s how we call kabobs in Greece!) Yum!!!
