Hello Friends…I’m back and so did son and I – we went back to Cowgirl’s Creamery and it was definitely worth it.  I am not a big sweet-eater especially ice cream, but the thought of having Farm Fresh Hand Dipped Ice Cream for dessert was too hard to resist.  So much so that I ate my 2 scoops of Coconut ice cream as I was preparing dinner!

The cows were back in the barn at Emerson Farms but the goats were out at Cowgirl’s.

I cook chicken so often that I’m afraid one day we’ll sprout feathers!  We like chicken, it’s quick, easy to prepare, and cheap but sometimes it can be BORING.  Yesterday I came across a recipe by Caramelpotatoes.com and since I had all the ingredients I decided to give it a try.

Ingredients:

1.5 lbs chicken tenders ( I cut up chicken breasts into chunks)

1 egg

1/2 can sweetened condensed milk (I used unsweetened coconut milk)

1 1/4 cups coconut

1 cup bread crumbs or Panko (I used both)

1/2 cup melted butter

Preheated the oven to 400~
Used parchment paper to line baking sheet

Cut up chicken breasts into chunks

Egg and coconut milk on one side
Coconut and Panko on the other side

Dipped chicken into egg/milk mixture

Coat both sides of chicken in crumbs and coconut

Placed chicken on baking sheet covered with parchment paper

Poured melted butter over the top – the next time I will use PAM to save the calories

Baked 15 minutes on each side and then an additional 20 minutes. I could have turned on the broiler to darken but wanted to keep them moist.

Dinner is served!
Tayair was the only one who didn’t like it because he doesn’t like coconut.

Yesterday I grilled a pineapple using a recipe from the June issue of @allyou magazine. It was a sweet ending to our BBQ meal.
