Hello Friends and Happy Fri-Yay!
The days are getting shorter and school started this week so I am lining up my recipes for the Fall. Chicken is a staple in our house and this was an easy breezy “4 ingredient-less than 40 minute” recipe.
Ingredients:
Chicken Breasts ~ Mozzarella Cheese ~ Minced Garlic ~ Fresh Spinach
Rinsed chicken breast and placed on Wax Paper
Covered with another sheet of Wax Paper and flattened with kitchen mallet
Spread minced garlic and sprinkled with a little black pepper
Layered with Spinach leaves and covered with Mozzarella Cheese
Rolled Chicken Breasts and secured with wooden toothpicks
Sprayed dish and tops of Chicken Breasts with Olive Oil Cooking Spray. Placed in preheated 350~ oven for 30 minutes and was no longer pink.
What is your favorite chicken recipe?

Hello Friends and Happy Fri-Yay!
What happens when it’s Friday night and you don’t feel like cooking, ordering pizza or going out and a bowl of cereal just won’t cut it? In our house when that happens we head straight to the garage and to the freezer. There is where I try to keep microwavable meals and snacks specifically for those occasions and last Friday night it was Lean Pockets Pretzel Bread Sandwiches.
I am not a big proponent of frozen meals & snacks because of the excessive sodium some of them contain but these Lean Pockets brand sandwiches are only 250 calories with 650 mg of sodium which isn’t a lot compared to others that contain well over 1000 mg of sodium.
The Lean Pockets Sandwiches were filled with Spinach and 3 Cheeses, Fontina, Romano and reduced Fat Mozzarella. I zapped one in the microwave for 2 minutes 30 seconds in the crisping sleeve then cut it in half. It didn’t seem like it had a lot of filling and could have had more spinach, but to my surprise it was quite good and hit the spot. The soft pretzel bread encased a flavorful mix of spinach and cheeses that paired well with my glass of Friday night wine!
Speaking of wine, I want to reintroduce my “play cousin” Cook E doe Face. She is a down to earth YouTube Vlogger who will have you in stitches as you watch her create some delicious dishes and “knock you on your butt cocktails”.
Cook E de Face is from Philly and I fell in love with her atty-tud (Philly slang) from the very first video I watched. In today’s world it is so easy to get caught up in the negativity but you know me, I like to keep it light. Cook E doe Face has me laughing out loud and reminds me of my own New York cousins. If it were left up to me she would definitely have a show on the Food or OWN Network!
Check out this recipe for Flatline Cocktail.

Are you a Winer – do you like trying new Wines – if so, I want your Wine Winning recipes!
I am not a wine connoisseur nor do I don’t spend a lot for a bottle of wine. I am a sucker for a deal and love fun colorful bottles, and this is where I shop on FriYays after work.
You meet the nicest people at Pockets Discount Liquors
(BTW I don’t know this man but asked if he wanted to be in the pic – lol)
Smirnoff Ice has a new flavor Peach Bellini, although not a wine, it is one my summer favorite drinks
Last weekend I added Peach Bellini Ice to Talenti Alphonso Mango Sorbetto and topped it with Whipped Cream
It looked better than it tasted, which is why I need your help!
Go to my Facebook Page to post a pic of your Winning Wine recipe and it will be featured in the

Crock Pot Soup
Posted January 15, 2013
on:In our house cold weather signals the time for a hardy and healthy winter soup! My grandmother (RIP Mama), used to make the best homemade vegetable soups, I can still taste the seasoned carrots, tomatoes, onions, celery and of course the soup bone with marrow. I was looking for new recipes and came across one that included kale which is my favorite vegetable.
Ingredients:
kale, soup beans, canned tomatoes, garlic, frozen veggies and soup stock.
I was going to use the smoked turkey necks but there wasn’t enough room in the pot. I had to use a larger crock pot because the bag of beans which had soaked overnight really expanded and I didn’t want to discard any of them. After spraying the crock pot with cooking spray I poured in the frozen veggies, beans, tomatoes, a spoonful of garlic and then topped with handfuls of kale. One packet of the homestyle stock was dissolved in warm water enough to cover the beans.
Cooked on low for 8-10 hours.
I came home to a house smelling GOOD and a fully prepared dinner! This soup was healthy, delicious and very filling, hubby topped his with a little Goat Cheese and I added a piece of brown bread (carbs are my down fall) and hot sauce!
Vlogger of the Week

on:Hello friends, I hope your day was productive and stress free but if not, have I got a Vlogger for you!
Cook E doeFace Place
Cook E doeFace is my “play cousin” from Philly, she reminds me so much of my real cousins in New York, like them she makes me laugh and brightens my day. If I have a rough day I’ll log onto YouTube and watch her make a meal or cocktail, my favorite is “Thank You Lawd“, reminds me of the “I Love Lucy” VitaVetaVegamin episode. With so much hatred and negativity in today’s world, it’s nice to have an escape, a place to go if only for a few minutes to kick back, relax and enjoy. So if you need some funny in your life, check out my “cuz”, I guarantee she will make you smile!
“Cook E doeFace Place is a relaxing place where you can get great, easy to make recipes, for novice all the way to the pros.”
Sit back, relax and enjoy the show – Smooches!
