Hello Friends and Happy Fri-Yay!
My sons are continuing their quest to “eat me out of house and home” and the foods that I featured in the Summer Snacks post are not filling enough! During a recent shopping trip to Shoprite I came across two items that may keep them satisfied until dinner!
Philly’s Best Steak Co., Inc. Halal Lamb Sandwich Slices
They can make cheesesteaks, Gyro’s, Stir Fry or I can use them to make Moroccan Lamb Couscous. These steak sandwiches are also available in Halal Beef and Chicken.
Perdue Sweet Italian Chicken Sausages
They can boil, pan fry or throw these sausages on the grill to make a hoagie, a wrap or simply eat them with eggs and grits for breakfast.
Add a salad with black olives, goat cheese, mixed greens and cucumbers and they should be alright until dinner!
The search continues for more in-between-meal snacks for my mini-men – any suggestions?

Father’s Day 2013
Posted June 16, 2013
on:Hello Friends, I hope everyone had a nice Father’s Day weekend!
Hubby had a nice one even with a change in dinner plans, but I was able to pull off what I think was a better meal than what we would have had at a restaurant. Yesterday he played a little one-on-one with Malik and fortunately, no injuries were sustained!
Father’s Day Dinner was baked Salmon, Spinach Shrimp Salad and Dill Potato Salad. Daddy’s (not mine) dessert was Lemon Meringue Pie and Talenti Gelato Mediterranean Mint.

Lunch from Los Machados

on:Hello Friends, I hope you are having a good Sunday
Yesterday after car shopping we stopped at Dutch Country Farmers Market to drop off the vacuum cleaner hose for repair. After checking in on Foursquare, I unlocked a Loyalty Badge and was awarded 1 lb of FREE Chicken Tenders from Stoltzfus BBQ. It was definitely a pleasant surprise and was going to be a perfect match for The Ghost Hot Sauce that I had just purchased.
Tired and hungry we drove over to Los Machados Mexican Restaurant for a take out lunch. This was my second time ordering the Texana Salad and it’s delicious; lettuce, tomatoes, cucumbers and red onions are topped with large succulent shrimp, tender and perfectly seasoned slices of beef and chicken. I added a few drops of The Ghost Hot Sauce to the salsa dressing and BOOM it was on like popcorn!
Hubby ordered the Vegetarian Delight #10; veggies cooked on the grill, served over a bed of rice and topped with cheese. Tayair had the Enchiladas Supreme; 1 chicken, 1 bean and 1 cheese and beef enchilada topped with lettuce, tomato, guacamole and sour cream. This family style, authentic Mexican restaurant is colorful with a fun atmosphere and the next time we’ll dine in so that I can order from it’s impressive bar.

Sunday Dinner
Posted March 24, 2013
on:Sunday dinner wasn’t an easy, breezy Crockpot meal but it was an easy fix.
Turkey ham was sliced at the deli, thickness #8; sweet potatoes, pre-packaged salad greens with tomato, and Peach Cobbler for dessert.
Turkey ham slices topped with pineapple rings and Cloves seasoning
Peeled and sliced sweet potatoes (candied yams) covered with mixture of brown sugar and water and a few pats of butter
Peach Cobbler for dessert
I didn’t make fresh collards or kale and decided against the salad, instead opened a can of Glory Seasoned Turnip Greens
Sunday dinner is served

Mediterranean Chickpea Salad
Posted June 17, 2012
on:The colors of summer –
Using a recipe from the @usaweekend magazine I made a Mediterranean Chickpea Salad. I didn’t have mozzarella so I used sharp cheddar and instead of cherry tomatoes I cut up a fresh tomato. The parsley was fresh from my garden.
